Apple has officially stopped today to sign iOS 12.0.1, initially available early October. This means that it is no longer possible to downgrade from the most recent version of iOS, iOS 12.1.

Apple is steadily stopping signing older versions of iOS as part of its efforts to keep users on the most recent and therefore most secure versions of the operating system. Apple recently stopped signing iOS 11.4.1, thus preventing downgrades from iOS 12 to iOS 11 and signing iOS 12.0.
Over the years, reasons for downgrade have become increasingly rare, especially as users rely on live updates rather than connecting directly to iTunes. In the past, users often demoted to jailbreak.
The most current public version of iOS is iOS 12.1. Apple is also currently testing the beta version of iOS 12.1.1, which is currently in its third beta release. The update includes new features for iPhone XR, new complications for Apple Watch, and more.
