Agostina Martínez met Damián Isabettini a few years ago during a trip to Brazil. On one of its beautiful beaches, they exchanged contacts and returned to Buenos Aires. However, the relationship did not settle. until this pandemic, when Damián joined a project that had already started in mid-2017 with Agostina as the sole leader at the helm.

This project has a name and is Kambu, What this is sustainable art oriented towards gastronomy. A project in which they seek to raise awareness of waste and non-reusable products. They work with bamboo and coconut cane, which are natural resources, non-polluting, biodegradable and reusable.

It all started when she was working in a construction in the Delta with bamboo cane and, at the same time, she was thinking of the container for an international cocktail competition. Until the day when, when cleaning bamboo, the first sample was born. “From there, there were several steps and collaborators who helped me in the process and experimenting with the material,” Agostina explained to Infobae.

Then he detailed that a year later he tried coconut, another sustainable variant. With this material he made glasses and months later he designed bowls of the same material thanks to the exchange with a customer who encouraged her to try.

“The idea of ​​sustainability was born after studying hospitality and environmental tourism and participating in many gastronomic events. It took me. I have always had a deep struggle with plastic and unconsciousness in the use of resources», Agostina confided on the 100% sustainable project.

Today, the partners realize bamboo sushi or tapas plates, bamboo and coconut glasses, coconut bowls, bamboo sorbets, shot, spices, pencil holders, and are in an experimental process with bamboo buds and pots.

“I like everything about the process in general, From the discussion with the supplier to select the canes or coconuts, the journey and even the loading and unloading. The creative part that I like is the external drying where the cane is cooked and it comes out naturally varnished by the oil it contains inside, the aroma and what happens is pure magic, a delight for smoke lovers», Confesses its creator.

Regarding the drying that each delicate piece takes, they explain: “Internal hardening is much more extensive and complex, after selecting the part and determining its functionality, it is molded as needed and subjected to a bath with mineral salts and vegetable oil to cover the layers and seal them, which takes about two days.“.

For example, if you choose a room with bamboo, after measurement, cutting, sanding, external hardening, internal hardening, you get a part with organic and durable qualities without additives that hinder this process. If one is chosen coconut piece, must be cut, remove the pulp, do an internal and external sanding if you make a bowl (if it is only for the interior sanding of the glass), then internal and external hardening. Each piece takes about 10 to 20 minutes.
