Known as spanish omelet or omelet with potatoes, it is one of the traditional recipes of the Spanish-speaking countries. Characterized by not including flour among its ingredients, we can associate it with countless dressings, side dishes of all kinds and even hot sauces.
In this opportunity we will make a filled version of the classic spanish omelet where ham and cheese will be the protagonists. We can choose to replace the Gruyère cheese with mozzarella, blue cheese or string cheese. There are also recipes that include meat or chorizo among their ingredients, although this will all depend on the taste of the diners.
Ingredients:
- 1kg of potatoes
- 3 fresh eggs
- 2 large onions
- Fresh parsley
- 150gr of sliced cooked ham
- 150gr of sliced Gruyère
preparation:
We start by cutting the potatoes into very thin slices, we can help ourselves with a guillotine or with patience do it by hand. In a wok we put a little oil and seal the potatoes, this is optional although it will give the omelet a crispier flavor.
On the other hand, we cut the onions into small pieces. In a bowl, combine the potatoes, onion, chopped parsley and beaten eggs. On a very hot wok or frying pan with high sides, place half of the potato mixture.
On top we lay out the slices of ham and cheese interspersed and cover them with the other half of the potatoes. We lower to medium heat and cook it, covered, until we see that the egg has coagulated. With the help of the lid, we turn the omelet and cook it on the other side until no more raw egg remains can be seen.
