Chef Justin Schoville and Lindsay Zubay announced on social media on Saturday that they would be closing the doors of their restaurants in the historic Railway Depot building at 20 Fourth St. SE – permanently – on September 19.
“It’s a very difficult decision for us as we love this restaurant, the historic space, our loyal customers, and most of all the wonderful team of people who have made this place what it is,” they wrote. “To all of you who brought this space to life, we cannot thank you enough. You put everything you had into trying to make people happier than when they arrived, and we appreciate that. “
As to why they are closing, the reasons are the well-known challenges of 2021 – COVID-19 and staff shortages
“With the ever-changing effects of COVID, we have had to change and modify our day-to-day operations and this has significantly affected our business structure,” they wrote. “In order to exploit our highest potential and provide the best possible service, we need to have sufficient staff at all times. We don’t have enough to run the service well. We want our customers to have the best dining experience every time, and we can’t do that right now. “
They originally opened as The porch in 2016, soon followed by the launch of the Cellar in the small basement. La Cave served cocktails and small plates.
A vegetarian spin-off from the gourmet burger bar Hot Chip then took over the Cellar space.
The vegan burger bar with hot fries quickly gained popularity, but then the COVID-19 pandemic struck. It made sense to merge the vegan burger concept with the original Hot Chip at 1190 16th St SW.
In 2020, Schoville and Zubay rebranded The Porch to Porch Fried Chicken to make it more accessible with more emphasis on its signature fried chicken and more sandwiches with a counter serve format.
This left the basement open. Combining the colors of the 70s and 80s, with the style of Atari and the vibe of Cheech & Chong, they created Hippie Boxcar in January to accompany the burrito menu.
While they unplug the Porch / Boxcar Hippie Project, Schoville and Zubay will continue cooking for Rochester at Hot Chip, as well as Mr. Pizza North at 4040 28th St NW.
