The brewery of the 21st century

In the kitchen, Dehydrated Whale offers an extended service from 12h to 22h, and promises to satisfy the hungry with its delicious Breizh Flam, a base of Flammekueche revisited way Breton. Brewer, creator, entrepreneur

At the origin of this bar and the other Breton establishments of Lorient, Brest and Quimper, Jean-François Istin knew how to make the best of his personal and professional experiences. Originally from Combrit in Finistère, he quickly learns the pleasures of beer during his travels in a small black forest village paired with the Breton city. After marketing studies in Germany and 15 years in computer science in Paris, the desire to change his life and homesickness take him in 2000. "I wanted to return to Brittany to undertake," he recalls. Precisely, in Trégunc in Finistère, Britt brewery is in trouble. Jean-François Istin buys it and will use it until 2012. "We created new beers every year, we were in permanent innovation and became the most important micro-brewers. He sold the brewery to his two partners in 2012 to embark on a new adventure. Never running out of ideas, he created in 2013 the NDMAC-Systems from a concept launched in Europe in 2007. "I wanted to reinvent the bar / digital beer fountain. Explains the contractor. "The beer is stored in recyclable plastic refrigerated drums without CO2 injection. The products can be stored for several weeks instead of 3 or 4 days, which guarantees to offer a wider choice of draft beers. The fountain then recognizes the tagged drum and fetches information in the cloud. The customer only has to use a card. With 20,000 members across all connected breweries, 12 start-up awards, a future US implantaion in Denver and a brewery project in Nantes, the entrepreneur is surfing the wave of the local beer explosion and craft and seems ready to embark on the conquest of the West.
