We all read Dr. Seuss' clbadic book, Green Eggs and Ham, as we grew up. Between nostalgia and the abundant use of green color on St. Patrick's Day, we knew we needed to recreate a delicious vegan version to kick off our Saint Patty Day celebration.

Take some tofu, a vegan food coloring, and get ready for some quaintly colorful morning yams that will go perfectly with Irish soda bread with iced Irish coffee and vegan green soda for breakfast. Instead of ham, this recipe uses finely sliced ​​baked red potatoes.   • 5 red potatoes, minced

  • 1 block of extra firm tofu

  • 2 tbsp. Vegetable oil soup

  • 1/2 onion, chopped

  • 1 chopped garlic clove

  • 1 cup of spinach

  • Sea salt, to taste

  • Green vegan food color, as needed

Instructions

  1. Preheat the oven to 400 ° F.

  2. Place extra firm tofu on paper towels and press to remove excess liquid. Otherwise, use a tofu press.

  3. With a fork, crush the tofu to pieces.

  4. In a large skillet over medium heat, add 1 tablespoon of vegetable oil.

  5. Add chopped onion and garlic cut into cubes. Cook until softened. Add the tofu and stir until everything is hot.

  6. Add a few drops of green vegan food coloring until the desired green is reached.

  7. Add the spinach and cook until the spinach is wilted.

  8. Season with sea salt.

  9. Place 1 tablespoon of vegetable oil on a sheet metal platter.

  10. Spread the red potatoes on the baking sheet and coat them with oil.

  11. Sprinkle with sea salt.

  12. Bake for 15 minutes or until potatoes are lightly browned.
