Dr. Owureku-Asare reviewed tomatoes, oranges, pineapples, garden eggs, coconut leaves (Kontomire), as well as proteins such as shrimp and fish powder sold on the market.

According to a report by Myjoyonline, she added that markets have an impact on food because of the effects of handling, storage and presentation of these foods.

For example with oranges, she says, open display of fruits in the sun and on the ground dramatically affects the vitamin C content.

"Vitamin C breaks down quickly under the effect of heat and evaporates easily from the fruit. What's orange without vitamin C, "she questioned.

Dr. Owureku-Asare added that cancer-fighting substances, such as lycopene and other antioxidants found in tomatoes, are easily destroyed in these markets, making it possible to measure market conditions in any market. the country.

She also observed that significant amounts of pesticide residues in certain foods such as cabbage, lettuce, okro, "kontomire", corn and beans from a poor pesticide application have important consequences for health.

His research reveals that peanut paste is mixed with dried cbadava powder (Konkonte), while over 98% of palm oil is adulterated with carcinogens.

It has also been found that shrimp, as well as fish powder, have been mixed with sawdust, calling this practice a form of food fraud.
