Employees over $ 7.83 million late to 515 employees or former employees of Press Club, Gazi and Hellenic Republic for work between 2011 and 2017, after subscribing to the jurisdictional commitment.
An additional $ 16,371 was paid to nine employees of Jimmy Grants.
The founder and director of the company Made Calombaris apologized to all past and present employees concerned.

The Fair Work Ombudsman, Sandra Parker, said the binding commitment required the group to take strict measures to ensure that current and future employees in the restaurant group are properly compensated.
Calombaris is also planning conferences to educate the restaurant industry about the importance of complying with workplace laws as part of this commitment.

Fair Work inspectors investigated the Made group of companies after it reported insufficient payments at the Press Club and Gazi restaurants at Melbourne's CBD and Hellenic Republic restaurants in Kew, Williamstown and Brunswick.
The investigation has been expanded to include some restaurants operated by Jimmy Grants Pty Ltd, a company that shares common shareholders and directors with the Made group of companies.
Inspectors found that insufficient payments were due to misclbadification of personnel and improper processes and failures in their payroll and human resources systems.
The Melbourne-based company said it identified incorrect payments during a review in early 2017, as a result of a change in ownership and direction.
Leigh Small, CEO of the Made Group, said all current team members were now properly clbadified and new procedures were in place.
"Since we changed ownership, we have put in place a new CEO, a new Director of People and Culture, and new processes and procedures to ensure compliance with labor relations legislation, as well as the promotion of active in a culture of employee well-being, "he said.
The company must fund external auditors to check the wages and conditions of the group's workers each year until 2022.
