Crowds flock to Paris bouillon restaurants, which serve clbadic French comfort dishes at modest prices. The egg mayonnaise of "Bouillon Pigalle" – a modern version of the broth to eat – was recently voted "best in the world", and older outposts where you can eat in Art Nouveau splendor at only 20 euros for three dishes, are having something of a revival.
