The Trappist-Cistercian Sisters of Notre-Dame-des-Anges Monastery, in Albemarle County, have been making cheese for decades. But the calls really began to pour in after the recent publication of an article about their work. "Really the best Gouda I've ever had! Made with love," wrote a reader on the Catholic Herald's Facebook. Sister Barbara Smickel says that it is indeed the secret ingredient cooked in every wheel of two pounds of Gouda.
