Ina Garten has a great recipe for brownies that adds a little ingredient that she says enhances the flavor of the chocolate. Garten doesn’t skimp on chocolate either, making them delicious, melt-in-the-mouth brownies that can easily feed a crowd.

Ina Garten adds a unique ingredient to her brownies

In a video for Food Network All-Star Desserts, Garten showed off how she makes her sinful brownies – unsurprisingly, she doesn’t skimp on chocolate. She does add a secret ingredient, however, which she says really enhances the flavor.

“I think it’s the most popular thing I’ve ever done at Barefoot Contessa,” she explained as she got down to work breaking six eggs into a bowl. “We were selling a thousand a week.”

Garten then went on to explain that the extra little ingredient that she says takes brownies to the next level – coffee granules. “And then because the chocolate is really enhanced by the flavor of the coffee, I put three tablespoons of coffee beans,” she explained.

“No brewed coffee, but instant coffee granules,” she added.

In his pan brownie recipe (video below), Garten said that adding instant coffee granules is “one of those magical things that really brings out the flavor of chocolate.”

Ina Garten’s ‘Outrageous Brownies’ Recipe

Garten showed how easy it is to make his outrageous crowd-pleasing Brownies in the video. You will need the following ingredients:

  • 1 pound unsalted butter
  • 1 pound plus 12 ounces of semi-sweet chocolate chips
  • 6 ounces of bitter chocolate
  • 6 extra large eggs
  • 3 tablespoons of instant coffee granules
  • 2 tablespoons of pure vanilla extract
  • 2 1/4 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 3 cups of chopped walnuts

Preheat the oven to 350 degrees and butter and flour a 12 x 18 x 1 inch baking sheet.

Add the butter, 1 pound of chocolate chips and the bitter chocolate to a bowl and place over a pot of simmering water, stirring to melt everything, then allowing it to cool slightly.

Combine the eggs, instant coffee, vanilla and sugar in another bowl, then add the hot chocolate mixture. Sift together 1 cup of the flour, baking powder and salt and stir them into the chocolate mixture.

Garten has a special tip for his brownie complements: mix the nuts and 12 ounces of chocolate chips in a bowl with 1/4 cup of flour before adding them to the batter. “I’m just going to add flour to it so it doesn’t fall to the bottom of the dough,” she explained in the video. Fold the chips and nuts into the dough, then pour onto the prepared baking sheet.

The Food Network star offered another tip while baking: After 20 minutes of baking, she taps the pan to make sure air is released from the brownies before baking them for 15 minutes.

“So the brownies will bake at 350 degrees for about 35 minutes,” she explained. “And in the middle of cooking, because the air collects between the brownies and the pan, I just take the pan and hit it on the cooking grid and it releases all that air.”

Brownies are cooked when a toothpick is inserted and comes out clean. Let cool completely before cutting. Makes 20 large squares.
