What to expect from the new FiDi Venture of the USHG [19659003] This summer, restaurateur Danny Meyer will open Manhatta, 60th floor of a skyscraper in New York's financial district. Its Union Square Hospitality Group has six Wine Spectator winners in New York: Modern (Grand Award), Café Union Square, Gramercy Tavern, Maialino, Marta and Untitled.

Manhatta offers spectacular panoramic views of the city, but the team wants to create a relaxed, neighborhood atmosphere. Beverage Manager Matt Whitney will reflect this atmosphere with a diverse and accessible wine program. The list will be rooted in classic French regions, with a focus on Burgundy, the Rhone and Bordeaux, but California will also be well represented. It aims to offer a range of prices, styles and regions for all tastes, from beginners to wine professionals.

Manhatta will open with approximately 250 to 300 wine selections, and will likely grow to several hundred labels, with 16 wines by the glass. A wine wall in the center of the dining room serves as the center point of the restaurant and a working cellar during the service, containing about 2,000 bottles.

Maialino chef Jason Pfeifer will serve a three-course prix-fixe menu with à la carte options available at the bar and for lunch. The cuisine is inspired by Pfeifer's international travels, supported by French techniques.

Also on the 60th floor is the Bay Room, now available for booking. Rick and Ann Yoder, a new Asian Fusion restaurant, Wild Ginger, will open in late July in Seattle, five minutes drive from the flagship Grand Prix, and not too far from their winner Award of Excellence in Bellevue, Wash.

"I want it to be like a chef who's hosting a dinner party" Grant says. The seasonal menu changes daily, with homemade pasta, salads and wood-fired pizzas. He plans to later incorporate a retail element in Etta, where guests can order from a window to take away.

Aaron Pollack will oversee the wine program of about 80 selections, a shorter version of the Maple & Ash list, highlighting areas like the Loire Valley, Paso Robles, the Finger Lakes and the Willamette Valley. "What we're trying to do, it's just no pressure, no frills, just fun, affordable, affordable, but still high," Pollack says.
