Migrating Open Betas to stable versions will result in loss of user data – ie, your phone will be erased. Save your business if you do it. The instructions indicate at some point that the migration from the stable version to the beta should be secure, but that the individual steps claim to erase the user data. TL; DR: You should probably make a backup back and forth to make sure you move to or from the Betas.

You might encounter problems with some applications running Android 10 (and this may not be the fault of OnePlus, many developers have not yet updated the changes made to the platform) but OnePlus seems confident otherwise, with a "low probability" that you will encounter lag, jank or crash. Open beta probably supports most of the features provided in previous developer previews, as well as features that are not specific to Android 10 in general.
