A recent study by Purdue University of America found that fresh potatoes contain compounds that help reduce blood sugar levels.

The researchers studied the effect of substances present in the red, white and red potato extract. The study showed that consumption of white and white potatoes reduced the rate of glucose transfer, which helps to reduce the level of glucose in the blood. This effect was observed after 30 to 60 minutes of consumption.
The results also revealed that potato extract, which lowers blood glucose levels, contains a high percentage of phenols, anthocyanins and chlorogenic acid.
One of the researchers noted that the phenolic compounds found in fresh potatoes and fried potato chips actually help to regulate blood sugar after eating, which helps lower overall blood sugar.
