Medical research conducted in this regard has revealed that important nutrients such as lycopene, present in tomato fruits, are responsible for a 30-50% reduction in cancer risk.

"We seek to know the effective and vital role that food plays in preventing cancer, especially lung, liver and colon cancer," said researcher Chiang Dong Wang of Tufts University.

Although the proportions of most cancers are declining, the high rate of liver cancer and mortality in the United States is causing increasing concern, due in part to the parallel increase in non-alcoholic fatty liver disease, obesity and diabetes.

The tomato fruit is one of the most important foods because it contains an abundant amount of lycopene, which gives the fruit a red dye and contributes significantly to the fight against cancer.

Research suggests that lycopene-rich tomato powder can actually reduce fatty liver disease, inflammation and the development of liver cancer favored by high-fat diets.

The researchers pointed out that tomato powder was more effective than the same dose of purified lycopene supplements to prevent the development of liver cancer. This may be due to the potential beneficial effects of other nutrients contained in whole tomatoes, such as vitamins E, C, folate, minerals, minerals, phenolic compounds and dietary fiber.
