(THE NEW BOOK) – Justin Quek is one of Singapore's first famous chefs, with restaurants around the world in his 30-year career.

He closed Sky on 57 at Marina Bay Sands last June in the year, but returned to the site a year later with two concepts.

Chinoiserie is his classic gourmet restaurant – a mix of classic French and Asian cooking techniques.

The restaurant is open all day on Marina Bay Drive and this view can melt the most jaded heart.

And while you absorb the scenery and remember how much you love Singapore, you can feast on a menu of local inspiration.

The only dish I insist on trying is the Justin Chef's Signature, the Fried Live Wok, the Hokkien Noodle Lobster ($ 38).

He has a deep umami that seduces. The noodles are not soggy even if they are soaked in sauce, and the best is the generous amount of lard.

The Xiao Long Bao Foie Gras ($ 25, above) is a good example of Chef Quek's East-West blend. It's his favorite dish of a few restaurants and he brings it to Justin's dim sum menu.

The smoothness of foie gras is doing well in a dumpling, although it does not yield as much juice as the usual pork stuffing.

Many restaurants established in Singapore have versions of Satay that are worth it, and while the New Zealand Lamb Satay ($ 18) is delicious, it is more nostalgic that & # 39; innovator.

The meat is softer than it looks, aromatic and dense with flavor.
