Celebrating Singapore’s heritage one claypot at a time
House of Happiness is the latest addition to the cosy neighbourhood of Simpang Bedok— a casual homely space dedicated to preserving Singapore’s heritage through claypot rice dishes.
The project is the brainchild of Chef William Liou and his business partner Marvas Huang, who were also the talents behind Mr Lor Bak. Using techniques they have learnt from their years of working in fine-dining restaurants, they developed ways to shorten the cooking time for claypot rice. At the same time, they also introduced a healthier twist with a par-boiling technique.
At House of Happiness, the menu offers a mix of classics and updated interpretations. The Teriyaki Pork Jowl ($7.00) offers generous portions of tender pork jowl slices that have been sous vide for 16 hours, marinated in a teriyaki sauce and then pan-seared.
For rich umami goodness, diners can enjoy the Onsen Egg with Ikura and Tobiko ($11.00) where sous vide egg combines beautifully with tobiko roe and charred rice.
Paying homage to the well-loved claypot rice classics, the eatery also offers Chicken Wings & Salted Fish ($7.00) where the poultry is marinated with dried chilli, yellow bean paste and ginger before it is cooked with the rice; and stir-fried Minced Pork with Dried Shrimp & Eggplant($7.00).
Vegetarians will enjoy the Assorted Mushrooms with Baby Bok Choy ($7.00) savouring the natural sweetness from the oyster and shimeiji mushrooms, which pair well with the savoury rice.
