What made you work on this book?
"I have been working for many years on the food industry overhaul, so it was not too far, so at a conference ten years ago, a young girl was appeared and wanted to talk about wine and all the additives used in many wines of today, where a seed was sown.
How long did it take to write the book?
– A little more than a year. I read myself in a large amount of literature, I traveled in inflamed additives and in wineries. I've been collecting documents over the years and I've also written on the subject in Hunger magazine and written a report in the SVT Mission Review.
Was it in a place where you ended up?
– Not stuck, but many importers and wine producers refuse to be examined and answer questions regarding the manufacture of wines, if and which additives were used in production. It may be difficult to get answers, and some have had the strategy to put the head in the sand. This is rarely a good strategy. The wine industry, like all industries, is satisfied with transparency.

What changes do you expect in the wine industry?
– That there will be a table of contents on wine. The contents should be stated on the label exactly as on the smaller chewing gum. I also hope that the wine industry, producers and importers will go even further and tell us how the wines were made, what aids and techniques were used. I hope that wine editors will tell you more about how the wines are made and that they will spend less time describing whether the wine tastes like raspberry or blueberry … Just like the food, I think more and more consumers will want to know how their wine has actually been made.

In the book, you combine industrial wine with natural wine. But are there wines well done between the two that you do not really mention?
"I consider natural wine to be the best example of the opposite of industrial wealth.The problem for those who make artisanal wines other than natural wines is that their descriptions of wines do not differ much from what is on the bottle of all industrial wine.It is the same beautiful traditions and culture slides that are painted.I ask for more transparency and greater diversity.But I have no comment on the wines you drink.
