1.25 dl fresh squeezed lemon juice

4 tablespoons white rum

1 tbsp grated lemon zest

100 g powdered sugar

2 dl coconut cream

3 dl cream

Mix the rum and lime juice with the powdered sugar , add the zest of lime then the cream. Beat until stiff, then add the coconut cream. Put everything in an airtight container and place the mixture in the freezer overnight. Serve with peppermint

Iced coffee

Yes, I know, I always post iced coffee. I just like it! I am not really a coffee drinker and enjoy coffee especially as latte macchiato, and only in Italy or if someone does one with love for me; I like pouring an espresso on vanilla ice cream. In the summer, however, I replace my morning black tea with milk and sugar with iced coffee. An interesting change is iced coffee with ice cubes made from frozen coffee.
