A Nebraskan school cook fired after serving kangaroo to students

A public school superintendent from Nebraska apologizes after a cook from the dining room has served kangaroo meat to students without their knowledge.

In a letter to parents on October 17, Superintendent Mike Williams of Potter-Dix School District in Potter, Nebraska, said Chief Kevin Frei had served "kangaroo meat mixed with beef" in chilli to the students for lunch. The lunch containing kangaroo meat was served on October 10th.

According to Williams, Frei added that he had added exotic meat to its nutritional value, "because it's a very lean meat."

The Associated Press reported Thursday that Frei was no longer working for the school district. No additional information was provided on Frei's dismissal and Williams rejected requests for comment.

"I do not think kangaroo meat is unhealthy or dangerous," Williams wrote. "But it's probably not a staple of our diet and will not be part of the Potter-Ten meal program, or any other staple foods."

Williams promised that the school would no longer serve food of this nature.

"If a family wants to eat exotic foods, they can do it in their free time – not at school," writes Williams in his letter. "If we had foods or ingredients that go out of the ordinary, they should be on the menu so that students and families know what they are for. We will never serve food of this nature again. Period."
