What is the problem with the turkey booster?

According to USA Today, a salmonella turkey outbreak hospitalized 63 people and sickened 164 in 35 US states, leaving one victim in California.

Officials do not suggest cooks give up the Thanksgiving turkey, but advise them to wash their hands before and after handling the turkey. Warm, soapy water should be used to thoroughly clean all surfaces that may have come in contact with raw meat or poultry juices.

Instead of defrosting the turkey by leaving it on the counter, cooks must thaw it in the fridge in cold water, which is changed every 30 minutes, advises officials. When cooking turkey or leftovers containing turkey, make sure that the food reaches an internal temperature of at least 165 degrees Fahrenheit.

How long does it take to thaw a turkey?

According to Butterball, there are two ways to thaw the precious bird.

Defrosting the refrigerator

  • Thaw the breast, in unopened packaging, on a tray in the refrigerator (40 ° F or less).
  • Allow at least one day of thawing for 4 pounds.
  • Keep the turkey in its original package and place on a tray.
  • Use within 4 days after thawing.

Thawing in cold water

  • Defrost the breast, in an unopened envelope, with enough cold water to completely cover your turkey.
  • Change the water every 30 minutes and if the turkey can not be fully covered, rotate it every 30 minutes to keep it cool.
  • Estimate a minimum defrost time of 30 minutes per pound.
