The guide has awarded new stars to 16 restaurants

The 2019 Michelin Guide, arguably the pinnacle of restaurant rankings, has just released its latest listing in New York, with three two star additions and 13 star additions. And this is a major step forward from last year's list: the city now has 16 newly-starred hotels, compared to six smaller establishments in 2018, half of which are Japanese.

Regarding the coveted list of three stars? It was predictable that the same restaurants would retain their stars as they have for a few years: Daniel Humm's Eleven Madison Park, Eric Ripert's Bernardin, Thomas Keller's Per Se, Masa Takayama's Masa and Chef's Table. Caesar Ramirez in Brooklyn Fare have all maintained their three-star status. Again. (The category has largely remained stagnant for years, with the exception of the demotion of Jean-Georges in the 2018 list. And his lack of movement has become a "situation" that has caused some legacy in the culinary world, given the wealth of New York's restaurant is home to many places deserving three stars.)

Gabriel Kreuther, Ichimura at Uchū and Joel Robuchon's L'Atelier are the new two-star hotels this year. But I can not say that I am surprised. Restaurants are up to Michelin's reputation for food, ambiance and service. They are all remarkable, of course. But none of them is really innovative or deeply exciting. After all, Michelin is known for its relatively "safe" and lucid choices.

However, there is an anomaly: the basement Tetsu Masa Takayama, now closed, is technically one of the additions to two-star restaurants in the city. But the guide went to press before the concept closed.

Regarding Additions to an Atomix Star, Bouley at Home, Claro, Jeju Noodle Bar, Kosaka, The Cuckoo, Joel Robuchon's Grill, Noda, Okuda, Oxomoco, Nakazawa Sushi, Sushi Noz and Tuome all made the cut .

It is worth noting that Asian cuisine, especially Japanese, has held up well. And for the first time in Michelin's history, a noodle shop even claimed a star. Still, it is quite puzzling that no other quality restaurant offering noodles (and New York certainly has many) has a star.

Mexican food has also gained ground. Claro (a restaurant in Oaxaca) and Oxomoco (a Mexican-style restaurant) are two of 13 new star-rated entries.

Another novelty, it was time for Daniel Rose's Cuckoo, located in the hotel Howard Howard SoHo. Enthusiastic guests have long mobilized for its inclusion. And this first star was well deserved. I think, however, that many would say that it is a restaurant good enough to assign two stars.

Beyond all this, several stripping took place this year: Breslin, Aureole, Delaware and Hudson and Minetta Tavern do not have more stars.
