Valley Focus: Dinner of four dinners in Clovis

Calling all gourmets! You do not want to miss your chance to enjoy a four-course dinner with a delicious wine. The 7th Annual Wine Matching Dinner is Friday, August 17, 2018 at the Clovis Veterans Memorial District.

The event is a fundraiser for UCP Central California. Keith Allen, a board member of Central California's UCP, is a local chef who will lead the team that creates and serves appetizer, salad, supper and dessert of the evening. Each course will be paired with a different wine selection. Allen was a guest on Valley Focus hosted by Margot Kim. (Airs July 15) He shared details about the event and the cause

Margot: I can not believe we were talking about it already, Keith. This time of year has already begun

Keith: Thank you for inviting me here, Margot. It's like an annual event. I'm like, "Whoo-hoo!"

Margot: Well, Pulling Strings is one of the most anticipated events in the Valley, I think, because it's just delicious.

Keith: You know, I hear that more and more, and I say to myself, "It's fantastic that people are actually, you know …" Obviously, with the different

channels and different shows of food and other things, it is perking the interest with people. They are like, "Oh, my God, let's spoil us." And it's like, you can go out

and spoil yourself, at the same time, go help cerebral palsy united. 19459007 Margot: Is it difficult to come up with the menu every year? And how do you do that?

Keith: You know, what's really complicated with that, I go out of there and – I had worked at old Nicola years ago. [19659003] So every year it's like, "Yeah, you know, I'm in good faith, I can serve and serve the traditional stuffed steak."

So I'll go through there, and I make the traditional steak stuffed with that and my own stuffed salmon.

So in this way, you have the balance between the fish or the beef, the salad, but then the dessert, so In general, I try to change a little the

desserts. But the hardest thing is to cross and – The hard thing that really does – Oh, it's so difficult.

It's funny how many people die from wanting to help me try the wine.

throughout dinner, an education almost in that the flavors are really harmonized together.

Keith: Yeah, you know, what's great is that you like it – You know, I'm a fan of extreme wine, if you want.

You know, it's a big world, and there are – I like to browse and present wines outside of – that can be easily available,

to which people are accustomed. There is just – As I said, the world is a big place. South Africa, Pinotage. You know, this year I go

to pbad and serve a Pinotage in South Africa.

Margot: Wow.

Keith: And Grillo out of Sicily with which I was doing a pairing, I think, a Catania chardonnay, you know, with the salad – or, with the salmon with that one.

And, you know, with desserts, Viognier or something like that.

Margot: Well, you are already giving us hunger.

(Both laugh)

Keith: I think so. "I should have brought food," but they would have taken it before I got there

Margot: Yes, that would never have it done here. So, these are all benefits for UCP and the great work that this organization does.

Keith: Well, that's it – Believe it or not, I can not believe where the time has gone, but it's actually now the seventh year , so …

And that only grows up. It's more – not even a fundraiser. It's more a friend-raiser, you know?

It's all about it. People can live and experiment – what better way? More food and drink – to get to

just – I fell in love with the kitchen, obviously . The kitchen is just like – just gone, "It's great."

Margot: And the guests are going to have some entertainment – not to mention, of course, good food and chords.

But entertainment and a sale to Silent Auction And some of the most popular items I've ever seen at a silent auction are the practical art of students at the UCP

Keith: Oh, yes, you know, the student – I mean, this is part of their – with their arts and that they have courses at the UCP that they offer, and the students pbad, and they I will create the work.And you can also show them and buy them there too

The money goes to them, but the students actually create objects for the event.They are there for silent auction

.Many times, they may be musical instruments. Decoupage, tiles, these types of things, wind chimes, candles –

I mean, you know … it's absolutely amazing, you know, with what they do. And, you know, the key thing

about this is that they just do it out of love. I mean, you look in their eyes, and, you know …

And I have to say, they're like my best friends. They really are, you know? 19459007 I had a student who was there, Ambrosio. He's not here anymore. He had pbaded.

But you know what? That was one thing he had told me. It was like, "Keith, never forget us."

And I say to myself, "You know, it's really hard to live with." [19659003] So that resonates. It really does. It resonates here, more importantly.

Margot: Well, Pulling Strings certainly honors these students,

past and present, and maintains the mission of the UCP.

Keith: That's right. Oh, yes, that's the case
