That's the comment of Vincenzo Pallonetto provincial representative and regional president of Confartigianato Bakers, after the publication of the regulation governing the names of baked goods and fresh bread in the Official Journal and the adoption of the word "canned bread".
The regulation (Interministerial Decree No. 131), called out by the category and whose process began in the last legislature, will enter into force on 19 December. According to the new provisions, which bring a little clarity to the bakery sector, the term "bakery" refers to the company which, with its factories, carries out the entire cycle of production, processing of materials first until the final baking.
Hence the introduction of the definition of "fresh bread", clarifying its meaning: is called "fresh" bread obtained through a continuous production process, without interruption for freezing or freezing, at the same time. Except for slowing down the process of emergence, without the use of additives or other conservation treatments.
"Preserved bread or prolonged durability" means a non-prepacked bread for which the production process provides an additional method of preservation compared to those subject to the information obligations defined by national legislation and by the European Union.
Only EU legislation, in the interests of transparency towards the consumer, provides that for this type of bread, at the time of sale, adequate information should be provided on the method of preservation used. in the production process, as well as how it is conserved and consumed.
