Scientists at Wageningen University & Research exposed four different edible insects to UV radiation and three times to four levels of vitamin D.

In the case of mealworms, the content was even increased by more than 60 times. This ensures that a meal worm contains as much vitamin D as a fatty fish, one of the few sources of nutrition that provides a lot of vitamin D. Edible insects, such as grasshoppers and flour, are rich in different minerals and vitamins.

Vitamin D is important for the human body. A deficiency is associated with multiple conditions such as joint pain, energy shortages and muscle contractions. Unlike other vitamins, D can not only be absorbed by food, but can also be made in the skin. However, this is only possible when there is enough solar energy, and therefore ultraviolet radiation.

Researchers expect the results of this research to lead insect producers to use UV radiation to make products healthier.
