"There is a belief that eggs raise blood cholesterol, but scientific evidence has shown us that there is no relationship between cardiovascular disease and their regular consumption," he said. the teacher.

The researcher of the Food Engineering Program of the Department of Chemical, Industrial and Food Engineering of the Universidad Iberoamericana explained that several myths about this product have been popularized; However, most of these ideas are wrong.

"Up to now, we have no scientific study that demonstrates a direct relationship between cardiovascular disease and regular egg consumption," he said.

Pedroza explained that the egg is a food rich in high quality protein, which helps to increase satiety, which can result in lower calorie intake.

He added that this food contains several nutrients such as vitamin D, vitamin B12, folic acid and selenium, which have been associated with the prevention of chronic diseases such as heart disease, l 39; arterial hypertension, cognitive disorders and congenital anomalies. .

The expert explained that it is important to take into account some factors when using this food at home.

"Eggs may contain salmonella, a bacterium associated with outbreaks of food poisoning, so it's very important that every time we handle an egg, we wash our hands very well because this bacteria can be found in the shell."

He explained that shells should not be washed because they are covered with a protective layer, known as a cuticle, that prevents bacteria from entering through the pores of the shell.

He said that if the eggs are washed, they should be used immediately, while the broken ones should not be eaten and the egg shells should be thrown away.
