He went through time, generations and cultures. Essential ingredient of humanity, bread embodies the very symbol of food in the collective imagination. And yet, little is known about its origins. It is thought that it is closely related to the agricultural revolution, but a discovery made in Jordan tells a different story, which will force them to rewrite the books.
The site is Shubayaqa in northern Jordan. It is here that an international team of scientists coordinated by Amaia Arranz-Otaegui, of the University of Copenhagen in Denmark, has identified the first traces that have been discovered that indicate the making of bread. The discovery, which is published today in the scientific journal PNAS shows that at that time, and at the same time, at least in this region, hunter-gatherers already knew how to grind the grain and seeds with the intention of making bread, which would likely be flattened, as suggested by the authors.
The team did not doubt to characterize the traces found at Shubayaqa as being similar to bread, given their structure and the constituents they contained, made from wheat and tubers wild
