Blackwater Distillery at Co Waterford has become the 21st Irish whiskey distillery operational and one of the first in the world to adopt blockchain technology.
The new Ballyduff Distillery, near Lismore, County Waterford, began distilling whiskey on Tuesday.
The distillery, which will open to the public early next year, will produce Single Malt and Pot Still Irish Whiskey. He will also continue to produce his popular range of Blackwater Irish Gin.
The number of distilleries in Ireland has exploded in recent years. At the beginning of the decade, there were only four in operation. More than 20 other distilleries are expected to go into production in the coming years, of which at least five should open in the coming months.
Blackwater Distillery has already adopted early, such as the Adelphi Ardnamurchan distillery based at Dunfermline, adopting blockchain technology with each bottle of whiskey produced with a symbol allowing customers to scan and access complete information about the process of production.
Figures released by the Central Bureau of Statistics earlier this month show that the value of Irish whiskey exports increased by 10.1% in the first eight months of the year.
Irish whiskey is currently the fastest growing premium spirits in the world, with sales growth exceeding 10% per year in more than 75 countries.
The Irish Whiskey Association (IWA), which originally set a target of doubling global alcohol sales from 6 million nine-liter cases to 12 million by 2020, has recently announced plans to double sales, which are expected to reach 24 million by 2030.
