Blackwater Distillery starts production of Irish whiskey

Waterford's Blackwater Distillery began distilling Irish whiskey, becoming the 21stst operational distillery in Ireland.

Blackwater Distillery will use blockchain technology to be "100% transparent"

The Ballyduff distillery near Lismore, County Waterford, will produce Irish whiskey made from single malt and pot still. The company also produces Blackwater Irish Gin.

The site is believed to be the first whiskey distillery in the world to use blockchain technology.

Each bottle of Blackwater whiskey will have a unique symbol that can be scanned to provide access to information about each step in the whiskey production process.

The technology is being developed as part of the company's desire to be "100% transparent".

The three stills of Blackwater have traveled more than 2,300 km from Siena, Italy, where they were manufactured by Frilli distillation technology company.

The distillery will open to the public in early 2019.

William Lavelle, President of the Irish Whiskey Association, said: "We are excited to see another distillery start producing Irish whiskey, which will have 21 distilleries in operation. Over the next few months, we will see at least five other distilleries go into production.

"This is a radical change from the beginning of the decade, when there were only four Irish whiskey distilleries in operation. The revival of Irish whiskey shows no signs of shortness of breath.

"2018 was another year of exceptional sales growth for the sector, with global sales expected to exceed 10.5 million cases by 2018. This will be the first year Irish whiskey sales have exceeded the bar. 10 million cases since the ban in the United States in the 1920s.

"This is a very exciting time and we look forward to seeing the growth of the industry continue, fueled by the ambition, innovation and hard work of our Irish whiskey producers."
