– We had 25 years of profit. I'm happy, said Bent Stiansen at E24.

According to the latest annual accounts of the company Stiansen AS, the chief winner of the Golden Bocouse runs Statholdergaarden, which sold last year fine food and drops worth 40.5 million Swedish kroner.

Here is also the Statholderens Mat & Vinkjeller, the informal and cheaper restaurant located under Statholdergaarden.

Back to recording after half a year low

The turnover is about NOK 2.1 million less than the previous year. The starred chef thinks that this is due to a difficult period in the first half of last year, which also affected several restaurants.

– The entire sector in Oslo has decreased by 10% in the first half of 2018, explains Stiansen.

He says business is back to normal and the restaurant has been back since 2019.

– This year, we have returned to a record level. It's full of things and we are happy.

Operating profit amounted to NOK 3.04 million, down from NOK 3.39 million in 2017.

Take almost everything back

The annual result was NOK 2.53 million. This represented a decline of NOK 3.27 million the previous year. In 2017, the company received higher financial income from Font Forlag's share sales, which were later purchased by Cappelen Damm.

Of this profit, 2.5 million NOK were set aside for dividends, which then go to Bent Stiansen, 75% owner of the company, and his daughter, Natascha, up to 25%.

In addition, according to accounts, the Stiansen, as general manager, received NOK 812,533 of salary last year.

The restaurant manager thinks they could have gone out even more.

– We must have something to live, says the Stiansen, adding:

– Eternal is the only thing possessed. It's a tip for all restaurateurs. When you start, pay the debt. When you start making money, make the most of it. In this case, you get at least a private profit if it goes bad once.
