According to a study conducted by the Linus Pauling Institute of Oregon State University in the United States, all cruciferous vegetables such as cabbage, Cauliflower, broccoli and cabbage, when eaten raw, can prevent the production of thyroid hormone, which regulates the metabolism.

The study showed that these vegetables contain progoitrin, a compound likely to interfere with hormonal synthesis. thyroid, and thiocyanate ions, which can expel the iodine of the thyroid, an important compound for hormonal activities. After eating too much raw cabbage, hormonal irregularities can occur, causing fluctuations in blood glucose, weight and metabolic health in general.

But it is worth mentioning that these are very high quantities and therefore it is not necessary to refuse a raw cabbage salad from time to time. However, if you overdo it, the thyroid can suffer from swelling, usually called goiter. When you resume a normal diet, the effect will disappear.

The 2015-2020 US Food Guide recommends eating a daily variety of vegetables (2 1/2 glbades per day for a 2,000-calorie diet) from all vegetable groups. No specific recommendations have been made for cruciferous vegetables, but adults are advised to consume 1 1/2 to 2 1/2 cups of dark green vegetables (including cruciferous vegetables) per week.
